Elvis Juice pancakes!!
It’s a @brewdogofficial kind of week I think! After @brewdogemmad shared the photo of the Elvis Juice pancakes from Ohio I’ve been meaning to try them. This evening I did and they came out pretty well!! They are thick and fluffy with a slight touch of citrus. I had them with maple syrup and spray cream – yum!
Here’s my recipe in case you want to try:
1 cup Elvis Juice
½ cup sour cream
1 egg, beaten
2 tablespoons sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 ½ cup self raising flour
2 teaspoons baking powder
1 teaspoon baking soda
Pinch of salt
1.Whisk together the egg, Elvis Juice, milk, sour cream, butter and vanilla extract.
2.Combine the flour, sugar, backing powder, baking soda and salt in a separate bowl.
3.Add the flour to the wet mixture and whisk together until no large clumps remain.
4.Let the batter sit for at least 15 mins – it will puff up.
5.Heat a nonstick pan on medium/low heat. Spray with oil or melt a dab of butter in the pan. Add serving spoon sized blobs of the batter to the pan and cook for 2 mins each side. My mix made 10 pancakes.
6. Serve warm with your favourite toppings!
Of course, there will be some Elvis Juice left over, which you will just have to drink I guess 😆
